Sarah's Apple Caramel Scones

Having an apple tree in my backyard means that in the August/September months I have more apples than I know what to do with... usually this means baking an insane amount of apple recipes and this Apple Caramel scone recipe is hands down one of my favourites to make in the fall. These sconce always turn out perfect and who doesn't love an apple caramel combo!

You can split the scones batter into 2 balls and make 16 smaller scones OR you can form all of the batter into one large circle to make 8 bigger scones, which is usually what I do.

Scone Ingredients 

- 2 cups flour 

- ½ cup white sugar 

- 1 tbsp baking powder 

- Pinch of salt 

- ½ cup of cold butter 

- 1 large egg 

- ½ cup of cream 

- 2 medium apples diced 

Caramel Sauce 

- 1 cup packed brown sugar 

- 4 tbsp salted butter 

- ½ cup of half & half 

- 1 tbsp Vanilla Extract 

Instructions 

1. Preheat oven to 375 F 

2. Sift flour, sugar, Baking Powder & Salt in a medium bowl. 

3. Cut in cubed butter until mixture is fine crumbs. (PRO TIP: grate in the butter using a cheese grater!) 

4. Stir in cream & egg. 

5. Add in diced apples. 

6. Flour counter, cut the dough into two portions, use your fingers to press the dough into a circle. 

7. Cut into 8 Triangles. 

8. Brush tops with cream & sprinkle lightly with brown sugar. 

9. Bake on a parchment paper lined sheet for 18-20 minutes or until golden brown. 


Caramel Sauce 

1. Combine all ingredients into a medium saucepan. 

2. Simmer over LOW heat while whisking until all ingredients are fully combined and smooth (6-10 Minutes) 

3. Allow to cool & thicken slightly. Once the scones are out of the oven, allow them to cool before drizzling with the caramel sauce!
