This is one of my favorite summer desserts and it’s soon to be yours too!

The crust is made out of a simple sugar cookie, with thick, creamy cream cheese frosting, topped with your choice of colourful fruits!

It is perfect for those summer time BBQs or parties that you just aren’t sure what to bring!

Get the kids involved! Let them make the fruit design on the pizza and it could end up being a fun baking day during their summer vacation. Its easy and fun to serve, just like a pizza

Another way to make this recipe more fun is with individual cookies. Instead of making one large pizza, try baking multiple smaller ones and have everyone make and decorate their very own fruit pizza!

What ever fruit you chose to top your pizza with, the colours will be sure to add something beautiful to the table!


Time: 1 ½ Hours – 2 Hours

Ingredients

Crust

½ Cups, room temperature, unsalted butter

¾ Cups granulated sugar

1 large egg

1 teaspoon Vanilla Extract

1 ½ cups, leveled all purpose flour

¼ Teaspoon Salt

1 Teaspoon baking soda

1 ½ teaspoon Corn-starch


Topping

1 (250g) Brick of Low Fat Cream Cheese

½ Cup Vanilla Greek Yogurt

½ Cup of Icing Sugar (or keep adding ½ cup until desired sweetness)

1 teaspoon Vanilla extract

Sliced fruit of your choice


Directions

1. Make the crust: In a large bowl cream the softened butter with either a hand-held mixer or a stand mixer until smooth. Add in the sugar and beat until light and fluffy. Beat in egg and vanilla.

2. In a medium bowl stir flour, salt, baking powder, baking soda and corn-starch together.

3. Slowly add dry ingredients into wet ingredients with the mixer on low speed. Once completely combined together, cover bowl and chill in the fridge for 30 minutes. Preheat oven to 350 Degrees.

4. Grease 12-inch pizza pan. Take chilled dough and press into pan evenly.

5. Bake for 18-20 minutes or until edges are lightly browned. Allow the crust to completely cool.

6. Chop your desired fruit how you like and set aside.

7. Make the frosting: In a medium bowl with a hand or stand mixer beat cream cheese until smooth and no chunks are left. Add Greek yogurt and mix until combined. Add icing sugar until desired sweetness is reached. Mix in vanilla until fully combined. Depending on how much icing sugar is added, if the frosting is too thick, add 1 Teaspoon of milk until desired consistency is reached. Place in the fridge until crust is cool.

8. Once crust is completely cool spread desired amount of frosting on top of the crust and add your fruit into what ever decorative pattern you wish! Cut and serve!

Tips and Knowledge

  • Adding cornstarch to the dough will give the cookie crust some softness
  • Chilling the dough before hand will prevent the dough from spilling over the sides while baking
  • Continuously taste your frosting while preparing. Everyone has a different ideal sweetness!
  • To save time make the dough a day ahead.
  • The fruit pizza will last about 3 days in the fridge before the cookie crust will become soft.
